BEEF SINATRA
DINNER FOR 4

INGREDIENTS:
2 lbs. lean beef stew meat, cubed
Flour
3 tbls. olive oil
2 onions, chopped
1 clove garlic, minced
1 cup fresh mushrooms, sliced (or Italian dried mushrooms, if available)
1 15 oz. can tomato sauce
1 cup water
3 tbls. Andria’s Brush-On Steak Sauce
1/2 cup red wine
1/2 tsp. mixed Italian seasonings
I tsp. paprika
Salt and pepper to taste
PREPARATION:
Dredge meat with flour. Heat oil in Dutch oven over med-high heat. Braise
meat until nicely browned. Add onions and garlic. Stir, cover, turn heat to low.
Cook for 30 minutes, stirring occasionally. Add all remaining ingredients, stir,
and cover. Turn heat high until steam appears, approximately 3 minutes. Then
turn down heat to low and cook 11/2 hours (or place in crockpot for serving
later). Adjust if more water/wine is needed.
Serve with grated cheese atop, if desired, and with polenta or risotto.
CHEF’S NOTE:
Salting before browning draws the juices out of the meat and
into the pan and is therefore not recommended.
